1. High quality plastic sheeting
In most kitchens, the first step you take to do a deep clean on your exhaust system is to wrap all your essential equipment in plastic sheeting. It helps prevent surfaces from being damaged and can protect equipment from water damage.
There’s a lot of different plastic sheeting out there and it’s not all created equal. In our experience, we suggest at least four-millimeter-thick sheeting, though some pros will use up to four millimeters of thickness. The thicker it is, the less likely it will be to leak and the less sag it will have.
Once you’ve found the right plastic sheeting, you must think about how you’ll get it to stay where you need it. Some companies use duct tape but it can be hard to get off when you’re done. Clamps and suction cups can only be used on certain surfaces and can only handle so much. That’s why we recommend super strong magnets. You can find serious strength – up to 200x what you’d get with an average magnet – and then can be used in pairs if you need to use them on a surface that isn’t magnetic.
3. A duct spinner
There’s long been an argument amongst those in the commercial exhaust world: Duct spinner v. cleaning wand. There’s nothing wrong with a cleaning wand, and in fact they’re great for a wide range of purposes, but a duct spinner simply can’t even be compared with a wand – it takes things to a whole new level.
A duct spinner has a head that self-rotates and is specifically sized and designed to clean ducts, vents, and other parts of your commercial kitchen exhaust system. These spinners are virtually maintenance free and have a 360 degree spray to make it easy to get up in every nook and cranny.
