The commercial kitchen hood
Think of the kitchen hood as the central hub of the entire interior exhaust system. It’s home to numerous components of the ventilation system. Most of the time, it’ll be installed right above your cooking area, to ensure it grabs as much smoke and debris as possible.
The upblast exhaust fan
Exhaust fans are located outside of your restaurant. They utilize a fan to move exhaust out of your ventilation system. They also need to have at least one grease filter, though typically more, to keep grease from spilling out of the system on the roof of your restaurant.
The make-up air unit
Your make-up air unit does just what the name implies: It replaces the exhaust air that was removed. You have a choice of tempered or non-tempered. When working correctly, they should replace 100% of the exhaust air that’s being removed by the rest of your system.
The fire suppression system
Once again, the name says it all: A fire suppression system works to help suppress fire. They are required in every commercial kitchen that has a hood system and they must pass certification that they will extinguish a grease fire that’s 680 degrees or higher. Generally speaking, fire suppression units will use either chemical agents or water, though some will use both. They can be installed in the kitchen hood or nearby, but there are legal restrictions that dictate how close they must be to the cooking area.
The hood filter bank
The grease filter that catches oil and debris before it gets into your exhaust system is located in the hood falter bank. Remember that if you get too much grease in your exhaust system, it can decompose much faster. That’s one of the reasons it’s so important to clean your hood filter regularly and avoid build up. Also change your filter regularly and ensure you’re using the right type of filter for the job.
