Your hood range is the most dangerous piece of equipment
This may surprise you, since your exhaust hood is likely made of stainless steel, which is not flammable. However, grease can be contained within that unit and that grease is incredibly flammable. The best way to prevent this from being a major issue – and from causing a fire – is to change your filters on the recommended schedule and to clean your hood thoroughly.
Kitchen fire suppression can go a long way but they can’t do it all
If you have a fire emergency that’s caused by gas, your fire suppression system should go off. It should kill the source of the fire right away, and will cut all the fuel that’s powering your kitchen equipment.
This will get rid of the source of the fire and the flames, but if the flames first catch onto the grease in a hood, then the fire suppression system is likely not going to be able to keep up. Why? Because extinguishing huge amounts of grease is simply not what they’re designed to do.
Strict hood cleaning is important
As we said above, the best way to keep this from happening to you is to follow a strict head cleaning schedule. You can hire out for the job but if you do, make sure they’re cleaning thoroughly. It isn’t enough for your filters to look clean. You must also take out the filters and look yourself. You must also look at the exhaust duct on your roof to make sure that the exhaust fan was thoroughly cleaned. Not doing so is not just a risk – it’s a huge liability.
It can be difficult or downright impossible to know 100% of the cleaning requirements in your area. If that’s the case, then you should certainly be working with a company who will clean your hood range equipment and guarantee the results.
