You have two main ways of cleaning the ductwork
The complications in cleaning the exhaust system is that getting in and out of the ductwork can be a challenge. There are two main options: scraping it out or use a pressure / steam cleaner.
Most kitchens we work with use the scraping method. This is both very effective an easily the most affordable option. As far as we know, this method has never caused a duct fire – unless it wasn’t done properly. Even the Uniform Firm Code of various states agrees that scraping is the right choice. One of the most common methods used is the Commercial Vent Vac scraping method, which is well known in many restaurants.
The advantages and disadvantages of pressure or steam cleaning
The other main option is to pressure wash or steam clean your ductwork. This is both more expensive and it takes a lot more time. It also requires a lot of prep work because you need to make sure you have a plan and a method for controlling wastewater. Finally, it’s considerably more expensive than simply scraping.
Of course, there are some upsides. For example, the National Fire Protection Association recommends cleaning ductwork down to the bare metal. Pressure or steam cleaning is the best method to achieve this goal.
The right choice may be to mix and match
Some restaurants will perform scraping once every month or two and will do a more thorough steam or pressure wash once a year. Of course, it depends on what’s accessible. In some cases, the ductwork isn’t accessible to be scraped at all and pressure or steam cleaning is the only option. These are things that can be taken into consideration when the kitchen is being designed.
