Have your kitchen staff certified

There is a nonprofit organization out there that exists solely to help prevent kitchen fires and to keep kitchen staffs safe. It’s called the International Kitchen Exhaust Cleaning Association (IKECA) and there are three programs for certification available for them. Each of them is recognized across the world, and each one is designed to train your staff on industry best standards to get exhaust systems cleaned safely and completely.

The right clothing is needed

Cleaning the exhaust system in a commercial kitchen isn’t like cleaning up a home kitchen. There’s all sorts of gear that can help keep everyone safe. They include:

  • Slip resistant shoes.
  • If chemicals are present, protective suits.
  • Gloves made to resist both heat and chemicals.
  • Goggles to protect the eyes.
  • A face mask to keep both the nose and lungs safe.

You’ll also want to make sure that the tools and equipment they use is in good working order, including any pressure washers, extension ladders, etc.

Start with a general cleaning

Before you start cleaning the exhaust system, take a look around the job site. Has the kitchen and all surrounding areas been cleaned? Have hazards been removed? Is there debris? Have you powered down and cooled off all cooking appliances? You may also want to invest in certain accessories, like an exhaust fan hinge kit, that can make it easier and safer to clean tough-to-reach spots.

Everyone is responsible for safety in the kitchen

At the end of the day, it’s everyone’s responsibility to maintain safety in a commercial kitchen. Management needs to provide safety training and safety systems like a fire suppression system, and employees to follow directions and keep their areas clean and safe.
