If so, how can you begin the process? An article in Restaurant News gives some great tips: 4 steps to an FDA-approved gluten-free menu. Anita Jones-Mueller writes:

1. Be sure management is on board

It’s important that management understands exactly how to note what gluten really is and where it can come from, and that they’re on board with developing procedures that help avoid cross contact. Management will also need to train both front of house and back of house, so if management isn’t on board then the experiment will likely be a bust.

However, if management does agree then your restaurant is able to move forward confidently. Following through with the idea to provide gluten-free food can mean big benefits, including a loyal following from people who need gluten-free options.

2. Start by analyzing gluten

Many restaurants are surprised by how many of their foods are naturally free of gluten, including veggies, fruits, nuts, unprocessed meats, potatoes, poultry, corn, fish, quinoa, and rice. That said, there are also some things that restaurant owners are surprised do have gluten, including sauces, seasonings, and flavorings. For that reason, it’s a good idea to hire a gluten-free expert to analyze every single food label and ingredient used – including both prepared items and sub-recipes.

3. Get the restaurant staff up to speed

There are programs out there already created to train restaurant staff on how they can develop, prepare, and serve options without gluten. Different things that must be learned include taking orders, answering questions from customers, communication with back of house, and preventing mistakes.

4. Stay diligent about staying on task

Developing a method and menu are only the first two steps. Once the plan is in place, it’s important to regularly check up with all levels of restaurant staff to make sure everything’s still being handled correctly.
