Tips and Advice From the Hood Experts at Hoodmart

What is NFPA 96?

NFPA 96 is a standard that every kitchen manager and restaurant owner should be well aware of. This standard is for ventilation control and fire protection of commercial cooking operations, and it was developed to keep commercial kitchens safe.

NFPA 96 provides preventative and operational fire safety requirements that are intended to reduce the potential fire hazard of public and private commercial cooking operations. This standard provides safety guidelines for the design, installation, operation, inspection/testing and maintenance of:

  • Cooking equipment
  • Restaurant hoods
  • Grease removal devices
  • Exhaust duct systems
  • Fans
  • Fire suppression systems
  • Clearance to combustibles

These requirements increase safety for building occupants, hood cleaners, equipment installers and inspectors. All HoodMart restaurant hoods and equipment are designed to meet NFPA 96 standards.
